Juniper, the next iteration of Michelle Courtright’s plant-based restaurant concepts in Minneapolis, is coming to the former Common Roots space. Courtright ran Fig + Farro, located in Seven Points, which closed during the pandemic.
“We really wanted a temperance bar with elevated food, and the legalization of THC in Minnesota really helped to create some interesting elixirs that don’t contain alcohol.” said Juniper co-owner Courtright.
Juniper’s kitchen will be run by Chef Heather Klein of Root to Rise, a pop-up shop and catering company. Juniper will feature seasonal, locally grown food, THC non-alcoholic drinks, an urban garden (pre-existing from Common Roots), a plant-based bodega, and an outdoor patio.
The plant-based menu will include wild morels, ramps, smoked juniper, and hazelnuts. Cocktails will include THC-infused drinks such as blue lotus tea, sparkling kava, house-made switchel and root beer with 33 roots, barks and berries.
For those who can’t wait until May, Juniper will be offering a THC Valentine’s Day to-go meal kit that includes a Juniper tincture for mocktails, citrus & fennel salad, plant-based charcuterie, lion’s mane mushroom steak, heirloom potatoes, and hazelnut cacao almond cake with CBD.
